Not too many people can pass up a delicious slice of baked cheesecake. It’s perfect, just as it is, or with a scoop of ice cream, cream, berries, coulis, or with melted chocolate dribbled over the top.
This baked cheesecake is a favourite at our homes, so we thought you may love it too.

You’ll need:
150g Castor Sugar
1/2 tsp lemon zest
¼ vanilla pod
200g mascarpone
300g cream cheese
160g eggs
2 yolks
11/2 tbsp plain flour
11/2 tbsp pouring cream
Base:
125g Unsalted Butter
250g Digestive Biscuit
Filling
1. Combine sugar, lemon and vanilla in a small bowl.
2. Then add both the mascarpone and cream cheese and combine till smooth.
3. Finally fold in the cream and the flour. Cook till just firm at 160°C.
4. Cool and remove from mould before it goes completely cold.
Base
Blend biscuits to make a crumb and then stir in the melted butter. Pack into base of the tin.
Bake for 40-45mins pending on size. Serves 8-10.
